The Proprietor and Chef - Natalie Trent

Is American-born and has lived abroad for almost half her life. She dreamed of living in France and running a Chambre d'hôte and Table d'hôte for over 10 years and, after two years living in France, has finally found the perfect location to live, where she can share her French experiences with you.

She is an internationally-trained personal chef, with extensive knowledge and skills in the cuisines of Italy, South America and France. Since living abroad for over 15 years, she has studied and experienced many international cuisines and learned various cooking techniques that have been shared and enjoyed with family and friends throughout the years, wherever she goes.

She offers the best in local regional cooking, with the freshest of ingredients from local open-air markets and local growers all over France. In addition, she can offer a varied international menu to those who are interested in sharing exotic ingredients and spices, and particularly enjoys preparing dishes with complex flavors, often involving the use of hot peppers from around the world.

She has a passion for food and all its complexities and would like to share that with you as you enjoy the beauty of the South of France from her home here in Azille in Languedoc-Roussillon.

About our region

Only 4 kilometers from the center of Azille, the Canal du Canal du MidiMidi runs through the vineyards and the community's hamlet of Jaurrès, which houses original aging barrels of gargantuan size.

In town, there are a few wine tasting rooms and Azille's own Cave Cooperative, which is home to many of the grapes harvested in the fall from the vineyards surrounding the village.

The village is also proud to offer many of the services that are, sadly, not to be found in every small village in the South of France. Here in Azille we have a post office, boulangerie, boucherie, épicerie, hairdresser, doctor and tabac (which also provides a bank ATM (cash dispenser) service.

Throughout the year, Azille offers a variety of street fairs, such as craft fairs, local food and wine festivals, and flea markets, plus many artisans and their crafts are on display around town on a permanent basis.

Carcassonne, the site of one of the last standing medieval cities in all its glory, is just 34km (21 miles) away from the comfort of your guest house. Within the modern village center, many cultural festivals, markets and fairs are present throughout the year, and a walk along the Canal du Midi and its port running through the city center is pleasant and calming.

Narbonne, a proud little city, features the Canal Robine Narbonnethat connects the Canal du Midi and the Mediterranean Sea, and where peniches and pleasure boats are a daily visual delight. Narbonne also offers a daily open-air market, and twice a week closes off the main streets to more crafts and local products. The center of town opens its doors to museums, the magnificent Archeveques Palace and Cathedral, and literally opens its street to the historical Roman road in the main plaza. There's something for everyone in this town, only 25 minutes away from Azille.

Other places of interest in the locality include Fontfroide Abbey, the amazing Chateaux Queribus & Peyrepertuse perched upon the hilltops of the Corbières and the African reserve in Sigean. Alternatively, there are hikes in the Black mountains, as well as wine tasting and local cuisine, cultural events, and so much more!

Selection from the Guest Book

"Bonjour Natalie, I would like to thank you on behalf of my oldest and dearest friends for the three truly delicious meals you prepared for us recently, and for making us so welcome on our reunion, birthdays, and anniversary celebrations in your home. You told us how you love choosing, preparing and cooking good food - and your love and energy shines through and is evident in the variety of dishes you create.

You have also created a wonderful ambience at La Dolce Vita which is unique, and a good way of life for yourself, which benefits your guests and visitors too. I believe we will return, but the memories of out recent visits already have a special place in our hearts."
Andrew M., Denmark
